We constantly have new cheese coming in from leading cheesemakes in Australia and overseas, we offer new courses in cheese appraciation and cheese making, we run special events and each Friday we celebrate the end of the working of the working week. So what's the best way to keep up with all this Staffords activity?
Every so often we issue an email to announce the theme for Thank God It's Friday, our weekly sigh of relief that the weekend is upon us. We also use this to advise of any news that may be of interest to cheese lovers. This email goes to out Cheese Club members, our TGIF subscribers and in fact anyone who cares to receive it.

Thank God It's Friday! (During Daylight Savings Period)
Every Friday at 6pm, the shop stops trading, and the fun begins! We select a few cheeses for tasting and invite you to join us between 6pm and 7pm. The cheese selection changes every week: new arrivals, old favourites or to fit a certain theme. We guarantee you'll be pleasantly surprised every time. Perhaps the best part is that you'll be sharing your enjoyment with others who also appreciate the wonders of the great cheeses of the world.
Depending on the selection, we occasionally levy a small charge. Even then, our Cheese Club members always get a generous discount. It's great way to end the working week. Bring your own wine.
05/10/06: TGIF Is BACK!
We are pleased to announce that TGIF will be re-commencing during Daylight Saving hours (6pm to 7pm) as of the first Friday in November. All are welcome.
01/12/06: Fig Season
This week seeing as it is fig season we thought we would feature our extensive range of blue cheeses which together with prosciutto combine deliciously with fresh figs. We have 11 blues in our display including the top three classics Roquefort, Gorgonzola and Stilton.
We also have:
- Blue Brebis (France) - the pasteurised sheep's milk cheese equivalent to Roquefort (well almost)
- Milawa Blue (VIC) - my favourite, what more can I say, firm pate with veins of blue-grey mould giving delicious complex flavours.
- Shadows of Blue (VIC) - the blue for brie lovers. Mild, smooth and creamy, double creamy in fact, that is truly wicked but worth every bit.
- Gippsland Blue (VIC) - the original classic creamy blue from the stables of Tarago River. Beautifully balanced blue cheese with medium blue flavours.
- Blue Orchid (VIC) - The big brother of the Tarago trio. Strong and astringent with a creamy texture. A blue cheese for blue lovers.
- Strzelecki Blue (VIC) - the Gold medal winning goat's blue. Light in blue and medium in goat's flavour with a smooth creamy texture. An all time favourite.
- Capparis Blue (NSW) - finally holding up the end for the NSW Blues is the beautifully clean finishing goat's cheese which is mild in both blue and goat flavour.
04/12/06: Goats Cheeses
This week's selection of goat's cheeses was a great hit with the most popular cheese going to Capparis White.
We have a large selection of goats cheese to choose from to help make any occasion a memorable one, including:
- Capparis - Bill Grainger's selection from Gloucester NSW
- Jannei on the western edge of the Blue Mountains
- Kytren from WA
- Meredith one of the originals from SW Victoria
- Milawa from the hills of NE Victoria
- Tarago River - Gippsland
- Woodside from the Adelaide Hills
- Queso Azul from Spain, a blue goats cheese.
So I have selected some interesting examples of different goat cheese styles for our tasting table this week.
Capparis White - Aled Hogget, a relatively new Cheesemaker has already made his mark in the heady restaurant circles around Sydney having impressed celebrity foodie Bill Grainger with his delicious goat cheeses. Amongst them is this Capparis White which Bill uses in his restaurants. Darren Templeman one of our top local restaurateurs from Restaurant Atelier (Awarded a Chefs Hat in 2004 and 2005) also has recently been impressed with this delicious cheese and is using it in his restaurant at Glebe. So this cheese has "form" you might say and jolly good form too.The cheese is very white and light having been made with milk of excellent quality. When ripe it runs readily having an acid finish and a mild to moderate goat flavour........the perfect match with those sparkling white wines for Christmas or a hot summer evening.
Milawa Tomme - Their cheeses have lots of natural earthy flavours which with an acceptable amount of variability make the eating enjoyable and always interesting. This goat's cheese is no exception. Semi hard and creamy with a moderate goat flavour and those earthy tones. This cheese would go well with a Pinot Noir or a chillable light red with bubbles.
Jannei Buche Noir - this champion cheese made by Neil and Jan Watson at Lidsdale is a beauty. Not only does it look sensational on the plate with the pure white curd and the vegetable black ash on the outside it tastes great too. Smooth and creamy on the tongue, it too has a light to moderate goat flavour. You can slice or crumble it onto a tart or toss through a green salad and wash it down with a light dry white wine.
Each of the goats cheeses are made with non-animal rennet and are mild to medium in goat flavour. We also have other "bigger" goat's cheeses for those who enjoy the more robust flavours.
